The Corvina has large flaked flesh, and a mild, sweet taste with a firm texture that starts out pinkish when raw, but cooks up white. Its high fat content and delicate flavor, makes it ideal for ceviche and many types of preparations, including baking, broiling, frying and grilling. It inhabits mostly the Pacific along Central and South America.
