The Soft-shell Crab is a name given to the Blue Crab when it goes through a molting process shedding its outer shell and leaving a delicate soft shell crab that enables almost the entire crab to be eaten. It features sweet, delicate textured meat that can be described as juicy, rich and creamy. The Soft-shell Crab is a delicacy rich in vitamins and low in fat. Best eaten fried, boiled or baked, it is native to the waters of the western Atlantic Ocean and the Gulf of Mexico.
